Gradually add chicken broth to mayonnaise (or salad dressing), blending well after each addition. Lightly toss together chicken (may substitute with 2 cans [5 ounces each] chunk chicken, well drained), celery, pecans, olives, and seasonings. Add mayonnaise or salad dressing mixture, blending it in lightly. For each serving, place a pineapple slice on crisp lettuce. Mound chicken salad on top. Garnish with additional mayonnaise or salad dressing, if desired.
