In medium bowl, sprinkle gelatin over 1/4 cup cold cider (may substitute with apple juice) allow to soften. Stir in boiling cider add sugar add lemon juice stir until gelatin and sugar are dissolved. Chill until mixture is consistency of unbeaten egg white, about 1 hour. Add apples and celery. Chill until firm.
To make dressing, cream together mayonnaise, cream cheese, and salt. Stir in sour cream, orange rind, and orange juice. May be kept covered in refrigerator for several days.
Cut slices of salad serve on salad greens with cream cheese dressing, if desired.
Variation
Cran-Apple Salad Mold: Use cranberry juice in place of apple cider. Any combination of fruit may be used, but apples and mandarin oranges are delicious.
