Toss grated carrot with mayonnaise (or salad dressing), season to taste chill.
Variations
Carrot Pineapple Slaw: Add 1/2 cup drained crushed pineapple .
Carrot Peanut Slaw: Add 1/2 cup peanuts.
Carrot Raisin Slaw: Add 1/3 cup raisins.
Carrot Apple Slaw: Add 1/2 cup diced, unpeeled apple. If desired 1/2 cup diced celery and 1 tablespoon minced onion may also be added.
Carrot Sandwiches: Use any of these slaws as sandwich fillings, using whole grain bread. Makes 4 sandwiches.
