Wash and trim spinach leaves drain well and pat or spin dry. Tear spinach into bite-size pieces. Toss gently with mandarin oranges, green onion, mushrooms, avocado, cherry tomatoes, (1 tomato, seeded and diced, may be substituted), and cucumber. To prepare dressing, combine in blender orange rind, orange juice concentrate, oil, sugar, vinegar, lemon juice, and salt. Blend thoroughly chill or gently toss into salad.
