Preheat oven to 325° F. Grease a 2-quart oblong baking dish. In a large skillet over medium heat melt butter or margarine. Add spinach, salt, nutmeg and pepper to taste. Mix well cover and simmer for 3 minutes. Remove cover increase heat to medium-high. Cook and stir until all moisture has evaporated.
In a medium saucepan over medium-high heat sauté onion in butter or margarine until tender. Stir in flour. Cook and stir over medium heat for 1 to 2 minutes. Add milk. Stirring over medium heat, bring to a boil and boil until thickened. Add cheese, salt and pepper. Mix half of the cheese sauce into the spinach mixture blend well. Pour spinach into baking dish.
Top with eggs. Pour remaining sauce over eggs. Bake for 10 minutes or just until heated through.
