5 to 6 pounds standing beef rib roast
Salt and pepper
1 clove garlic (optional)
At least 3 to 4 hours before serving, place room temperature roast in a shallow pan, fat side up resting on bones on a rack, and sprinkle with salt and pepper. Rub with garlic clove split in half (optional). Place in preheated 375° oven for exactly 45 minutes. Do not add water. Do not cover. Do not baste. Turn off oven. Leave the roast in the oven, with the door closed. Do not open the oven. Turn oven on again at 375° for another 45 minutes before serving. Remove from oven. Let stand 15 minutes before carving.
Note: For roasts 10 to 12 pounds, leave in oven 60 minutes at the beginning and 60 to 90 minutes at the end for medium rare.
