1. Sprinkle the cereal on the bottom of a deep 9-inch pie pan coated with nonstick vegetable cooking spray.
2. Arrange apples over the cereal and sprinkle with the lemon peel, lemon juice and cinnamon
3. Combine ricotta, artificial sweetener, egg and yogurt, mixing with a spoon until smooth. Pour over the apples.
4. Bate at 350°F for 45 minutes or until apples are tender when pierced with a fork and the top is golden.
5. Serve warm of cold.
