1. Grease an 8-inch spring-form pan or deep 9-inch pie pan with margarine. Sprinkle the bottom and sides of pan with the graham cracker crumbs.
2. Sprinkle gelatin over lemon juice and let stand 5 minutes. Dissolve the gelatin over low heat then allow to cool but not set.
3. Puree the cottage cheese and the ricotta cheese in an electric blender or food processor until smooth.
4. Add sugar, artificial sweetener, lemon peel, and vanilla and beat until smooth.
5. Blend gelatin into cheese mixture and pour into prepared pan. Refrigerate for 3 hours or until set.
