Date And Raisin Cookies

Ingredients

8 ounces dates
1 cup raisins
1 1/2 cups water, divided
1/3 cup corn oil
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1 teaspoon baking soda
2 egg whites
2 cups whole wheat flour
1 teaspoon baking powder

Directions:

1. Combine dates, raisins, 1 1/4 cups water, oil and spices. Cook together for 5 minutes until mushy. Cool at room temperature.

2. Dissolve baking soda in 1/4 cup of water

3. Add egg whites, flour and baking powder. Mix well and add to date mixture.

4. Coat a cookie sheet with nonstick vegetable cooking spray. Drop cookie mixture by the rounded teaspoonful onto the cookie sheet.

5. Bake at 350°F about 12 minutes, or until dough is set and lightly browned.
