1. Cover outside of 9-inch spring form pan with foil to prevent leakage or sue deep 9-inch pie pan. Break up crackers and use metal blade of food processor to process until finely chopped about 30 seconds
2. Add margarine and 1 tablespoon sugar and process to combine, about 15 seconds. Press into bottom of pan and bake at 325°F for 10 minutes.
3. In same bowl, process zest and the rest of the sweeteners until finely chopped, about 1 minutes.
4. Add ricotta and process until very smooth, about 2 minutes, scraping bowl as necessary.
5. Add remaining ingredients and process until blended, about 15 second.
6. Pour into pan and bake at 325°F for 45 minutes. Cool completely on wire rack, then refrigerate before serving.
