Soak liver overnight in cold water. Heat oil in large cast-iron skillet. Add liver slices and season to taste with pepper and garlic salt. Turn liver in 3 - 4 minutes. Cover with onion slices. Cover and cook for 5 minutes. Stir once or twice and then serve.
NOTE: Sliced heart can be substituted. Also, some like to dredge liver slices in flour before frying.
