Sauté onions in bacon drippings. Add beef broth and sherry simmer for 15 minutes. Ladle into individual oven-proof bowls and top each with a slice of toast. Place cheese over bread and place bowls on a baking sheet. Bake at 350 degrees for 12 to 15 minutes or until the cheese is melted.
