In a medium saucepan, over low heat bring sugar, flour, egg, vinegar and pineapple juice to a boil, stirring constantly. Remove from heat and cool. Place apples into a large serving bowl add pineapple and 2 cups peanuts. Fold in sugar mixture and whipped topping top with remaining peanuts.
