In a medium mixing bowl, combine olive oil, sugar, vinegar, soy sauce and ramen noodle seasoning packet together until sugar is dissolved. Break ramen noodles into small pieces. In a large serving bowl, combine ramen noodles, lettuce and almonds. Toss olive oil mixture with lettuce mixture to coat let stand for 30 minutes for flavors to blend.
