Layer apples, cinnamon-sugar, bacon, and cheese in order listed in a 9x13-inch baking dish sprayed with nonstick cooking spray. Whisk milk and eggs in a bowl until blended. add baking mix and stir until smooth. Pour egg mixture over prepared layers. bake at 375° for 40 minutes or until set. Serve with warm maple syrup.
Editor's Extra: To make your own cinnamon-sugar, combine 1/2 cup sugar with 1 1/2 tablespoons cinnamon. Store in a clean spice jar with a shaker top.
