Boil rhubarb, sugar, lemon juice, and crushed pineapple. Remove from heat and add to regular boxes of strawberry Jell-O. Stir until dissolved. Pour into jars and seal with paraffin wax or freeze.
Fun Fact: Most rhubarb is frozen for commercial and institutional use, most commonly for medicinal purposes; of the crops grown in the United States, only about a quarter is sold fresh. the stalks of rhubarb are the only parts used for cooking.
