Place pears, sugar, and lemon juice in a large pot and add water. Cook over moderate heat until pears are tender and syrup is thick. ladle preserves into hot, sterilized half pint jars and seal. Process for 5 minutes in boiling water bath, if desired.
Note: I like to add about 3 drops of red food coloring to the syrup because it makes the pears look more appetizing.
