Preheat oven to 350°. Combine corn, broccoli, egg, onion, 1/2 cup cracker crumbs, and 2 tablespoons butter in a large bowl and mix thoroughly. Spoon into a 1-quart baking dish and season with salt and pepper. Combine 1 tablespoon butter and 1/4 cup Ritz Crackers. Mix thoroughly. Sprinkle this mixture over top of casserole. Bake uncovered until golden brown, about 30 minutes.
Even Easier: Put crackers on a sheet of wax paper, fold over and roll with a heavy glass to crush. No clean-up! Or easy to use a food processor.
