Zucchini and Cheese Casserole

Ingredients

3 cups finely grated zucchini
1 cup cracker crumbs
1 cup grated Cheddar cheese
2 eggs, beaten
2 tablespoons chopped onions
salt
pepper

Directions:

Combine all ingredients and put in a well-buttered casserole. Bake at 350° for one hour.

Editor's Extra: Zucchini is so easy to prepare—just scrub it and cut off the ends. Throw chunks in a food processor, or chop finely or grate—it’s a very colorful, nutritious, “easy” vegetable. And good!
