Mix together all ingredients. Pour into a lightly greased 10-inch pie plate. Bake at 350° for 30–40 minutes, until golden.
Fun Fact: Zucchini is an incredibly versatile food. This squash can be steamed, grilled, sauteed, deep-fried, or baked. The usually dark green skin is tender and most often doesn’t have to be peeled. Common market length is 4–8 inches, but some specimens are as tiny as a finger, while some (mostly home-grown) can reach 2 feet long and 6 inches in diameter! Zucchini is used in salads, vegetable dishes, casseroles, and even desserts. And it’s good for you.
