Combine all ingredients except beets in a medium saucepan. Heat until thickened. Cool. Add beets. Serve warm or cold.
Fun Fact: Over 100,000 acres of sugar beets are planted in Michigan each year. The beets are stored outside before being processed and are kept cool naturally by cooler fall temperatures. The storage piles are 20 feet high, 120 feet wide and can be up to 1/4 mile in length. One beet is processed into about 5 ounces of pure beet sugar.
