Preheat broiler. Cut zucchini into 1?2-inch thick diagonal slices. Dip one cut surface of each slice into melted butter, then cheese, coating well. Place zucchini slices, cheese-side up, on greased pan(s) with shallow sides. Sprinkle with seasoned salt and herb, if desired. Broil 4–6 inches from heat until crisp and golden, about 6–8 minutes. Serve immediately.
Even Easier: A toaster oven works well for 1/2 recipe.
