Prepare potatoes according to directions. Put in buttered 9x13-inch dish. Spread sour cream on top of potatoes. Sprinkle with green onions. Add bacon; top with cheese. Bake at 350° for 20 minutes.
Even Easier: This makes enough to feed an army. I use a 2-ounce package of potatoes, 1/3 cup sour cream, 1 green onion (or 2 teaspoons dried), and a tablespoon of bottled real bacon bits topped with 1/3 cup cheese, and baked for 15 minutes in a small casserole dish. Serves 2–3 deliciously.
