Eggplant Rice Dressing

Ingredients

2 medium eggplant (2 pounds), peeled and diced
1 large onion, chopped
1 cup chopped celery
2 medium bell peppers, chopped
8 garlic cloves, minced
1 teaspoon salt
1 cup water
3 cups cooked rice
1 1/2 pounds ground pork
2 teaspoons salt
1 teaspoon black pepper
1/2 teaspoon red pepper
bread crumbs for sprinkling

Directions:

Boil eggplants, onion, celery, bell peppers, garlic, salt, and water in Dutch oven until vegetables are tender. Cook rice in separate pot. Place meat in small skillet; brown in its own fat. Drain and add to cooked vegetables. Cook meat and vegetables to a thick consistency. Add rice, salt, black pepper, and red pepper. Place in buttered 2-quart round glass casserole dish. Sprinkle top with bread crumbs. Bake in preheated 350° oven 15 minutes.

Microwave shortcut: After mixture has been placed in 2-quart glass dish, microwave on HIGH (100%) 4 minutes.

Despite his being blind since birth, at age 13, he had his first US number one hit single and album with the first live recording to ever top the charts. He is still the youngest person to have reached those number one spots.
