Custard Mixture:
Beat eggs and cream in mixing bowl. Stir in remaining ingredients.
Spinach-Mushroom Mixture:
Sauté spinach, onion, and mushrooms in melted butter 10 minutes. Stir into Custard Mixture. Pour into pie crust and top with parsley and Parmesan cheese. Bake 30–35 minutes at 375°, until golden and fluffy.
