Mama’s Monday Night Hamburger Casserole

Ingredients

1 small onion, chopped
1 (8-ounce) can mushrooms, or fresh mushrooms, sautéed
1 - 2 tablespoon olive oil
1/2 - 1 pound ground beef, cooked and drained
2 tablespoons flour
2 beef bouillon cubes, dissolved in 2 cups hot water
3 tablespoons tomato paste
1/2 bay leaf
1/2 teaspoon soy sauce
salt and pepper to taste
1 cup elbow macaroni, cooked
grated Parmesan cheese

Directions:

Sauté onion and mushrooms in olive oil until slightly browned. Add drained hamburger. Cover and simmer 10 minutes. Thicken with flour; add bouillon water and cook until thickened, stirring. Add tomato paste, bay leaf, soy sauce, salt and pepper, and cook a few minutes. Add cooked macaroni. Pour into casserole and cover with grated Parmesan cheese. Bake at 350° for 30 minutes.
