Roll half the pastry into an 11-inch circle. Fit into a 10-inch springform pan. Chill in refrigerator.
Beat 3 eggs in a large bowl. Add ricotta cheese, cottage cheese, bread crumbs, Parmesan cheese, parsley, 1 teaspoon Creole seasoning, salt, pepper, and hot sauce, and mix well. Stir in ham, mozzarella cheese, and green onions. Pour into pastry-lined pan. Pull edge of pastry over filling. Brush with 1/2 of the beaten egg.
Roll remaining pastry into a 12-inch circle. Place over filling, crimping edges of pastry together; the edge will be inside the springform pan. Brush with remaining beaten egg. Sprinkle with remaining 1/2 teaspoon Creole seasoning. Bake at 375° for 1 hour and 10 minutes. Remove from oven. Let stand until cool. Chill in refrigerator. Serve at room temperature.
