Cook noodles to al dente. Brown meat and drain grease. Add celery, onion, and garlic. Cook until done. Add herbs, cream, and cream cheese. Cook over low heat to melt cream cheese. Add wine and gradually add Cheddar and Gouda cheeses, stirring until nearly melted. Remove from heat.
Stir egg and cottage cheese together. In greased 9x13-inch pan, layer one-half of each: noodles, meat, cottage cheese, and mozzarella. Repeat layers. Bake, uncovered, in a preheated 375° oven for 30–35 minutes. Let stand 10 minutes before cutting. May be prepared ahead. Freezes well.
