Mustard's trademark zing can be delivered many ways. Prepared mustard adds flavor alone or in sauces. Whole mustard seeds can be used in a rub or paste. Mustard powder can be sprinkled wherever you need a boost. But wait. There's more.
With mustard's soul mate, ketchup, you can pick a brand and live happily ever after. But mustard is a condiment of many personalities. You can match it to your mood as well as your food. For hot dogs and lazy lunches, there's the bright yellow stuff in a squeeze tub. For other foods--burgers to pork roasts--there's a range of specialties you can fine-tune to the entrée. Dijon mustard, with or without wine, isn't just fodder for silly TV commercials. Dijon, France, is the holy city of mustard. With its smooth flavor, Dijon mustard spiffs up anything from chicken to cheeses.
In a sporting mood? There's nothing better for bratwurst than beer mustard, a.k.a. sweet mustard. It's coarser grained and has a mild kick that rides shotgun to the sweetness. Wanna start a fire? Super-hot Chinese mustard can sear an egg roll into more than your memory. Feeling mellow? For homemade vinaigrettes, reach for "old style" or coarse- grain mustard ("moutarde à l'ancienne," if you're going French). Its milder flavor is not only great on your favorite meats, but the crushed mustard seeds that give it its character are simply delightful perched on mixed greens.
For the adventurous, there are flavored mustards such as raspberry and jalapeño. Laid-back honey-mustard is often found lounging in sports bars, trolling for a winsome pretzel. Not a bad one to keep in the fridge for a midnight fling with a carbo-packing snack.
When you consider the power of this potent little seed, it's no wonder its praises have been sung since biblical times. If you don't have several different jars in your fridge, what are you waiting for? Life is short. Grab a knife and reach for the mighty yellow.
