First Knife, Then Fingers
To loosen the membrane, carefully slide the tip of a paring knife (the wider blade is more useful here than a boning knife) underneath the membrane at the first or second bone at the widest end of the slab (above). For baby backs, start at the second bone from either end. Gently rock the knife back and forth until you've made a space big enough to slide your finger in, then pull up the membrane carefully until you can get two fingers in.
Work From Bone To Bone
Slowly peel back the membrane at an angle. If the membrane tears, just slide your knife tip under the next bone and work your way along the rack. After two or three bones, it should be easy to pull the membrane off in a single sheet, as long as you keep your fingers close to where it connects to the rack (above). Don't get discouraged if you have to start over--one bite of those tender cooked ribs and you'll be glad you took the time.
