In a large skillet over medium heat, warm tortillas, 3 to 4 at a time, until soft and easy to handle. Flip tortillas after 3 minutes; remove from skillet. Add 2 tablespoons of shredded chicken to half of each tortilla. Roll up tightly; place seam-side down in a large dish. When all taquitos have been rolled, add oil to skillet and heat over medium-high heat. When oil is hot, carefully add taquitos, seam-side down, until skillet is full. Fry for about 5 minutes; turn taquitos over with tongs and fry on other side for 5 minutes, until golden. To eat, pick up a taquito with your fingers and top with crema or sour cream, salsa, lettuce and cheese.
Tip: Set out stacks of colorful bandannas...they make super-size fun napkins when enjoying tacos, fajitas and other messy food!
