Light & Healthy Fish Tacos:
Grill fish as desired. When fish is cooked through, slice each fillet into 2 long pieces. Warm tortillas in a skillet. To serve, fill each tortilla with a piece of fish, some cheese and some cabbage. Top with Fresh Tomato Salsa and a squeeze of lime juice.
Fresh Tomato Salsa:
Combine tomatoes and cilantro; add garlic salt to taste. Add jalapeño pepper, if using; mix gently. Cover and chill.
Tip: Sugar the rim of glasses before filling with iced tea or lemonade. Run a lemon wedge around the rim and place the glass upside-down in a small plate of sugar. Tap off any extra sugar before filling.
