In a skillet over medium heat, brown beef until no longer pink. Add taco seasoning according to package directions; set aside. In a very large bowl, combine salad mix, tomatoes, olives and onions. Crush tortilla chips before opening bag. Add chips and cheese to mixture in bowl; toss with your hands. Add beef mixture; toss again until all ingredients are evenly distributed. Serve with desired toppings.
