Brown beef in a skillet over medium heat; drain. Stir in pork & beans and peppers; heat until warmed through. Meanwhile, melt butter in a small skillet over medium heat; warm tortillas in the skillet on both sides until soft. To serve, fill each tortilla with 2 tablespoons of beef mixture. Top with cheese, salsa, lettuce and tomatoes. Serve with avocado and black olives, if desired.
Tip: When the summertime garden is bursting with tomatoes, peppers and onions, make homemade salsa...it’s a snap. Process veggies in a blender, add some fresh cilantro, salt and lime juice. You can’t go wrong...adjust the amounts to suit your own taste.
