Pierce potatoes all over with a fork. Microwave potatoes on high setting for 9 to 12 minutes, until soft when pressed with a finger. Meanwhile, heat chili in a saucepan over medium-low heat, stirring occasionally until hot and bubbly. Slice potatoes lengthwise; top with chili and remaining ingredients.
