In a skillet over medium-high heat, sauté onions in one tablespoon oil for about 20 minutes, until light golden and caramelized. Add salt and pepper to taste. Meanwhile, prepare pizza crust mix and let stand several minutes, according to package instructions. Spread out dough in a lightly greased 12" round pizza pan; lightly coat with remaining oil. Spread onions evenly over dough. Sprinkle cheese evenly over onions. Bake on the bottom rack of oven at 425 degrees for 12 to 15 minutes, until edges of crust are golden and cheese is melted and bubbly. Cool slightly; cut into wedges.
Tip: A flexible plastic cutting mat makes speedy work of slicing & dicing...after chopping, just fold it in half and pour ingredients into the mixing bowl.
