Heat oven to 375° F. Lightly grease large cookie sheet. In small bowl, combine ham, cheese and apple mix gently. Separate dough into 10 biscuits. On greased cookie sheet, press or roll out 5 biscuits to 4-inch circles.
Place about 1/2 cup ham mixture onto center of each circle. Press or roll out remaining 5 biscuits to 5-inch circles. Place each over filling. Press edges with fork to seal. Combine egg and water brush over filled biscuits.
Bake at 375°F. for 13 to 18 minutes or until golden brown. Cut each in half to form pocket sandwiches. To serve, garnish with alfalfa sprouts and tomato. Serve warm.
