Brown chops in heavy skillet, turning once. Remove chops from skillet and season with salt and pepper. Drain off part of fat from skillet. Empty drained sauerkraut in skillet; sprinkle with chopped onion and brown sugar. Heat about 5 minutes, stirring. Empty sauerkraut into a large shallow greased baking dish and arrange chops on top. Spoon soup over chops. Sprinkle on mushrooms, if desired. Cover and bake in preheated 325° oven until chops are tender, about 1 1/4 hours. Remove from oven. Using a pastry tube or spoon, make a border of mashed potatoes. Brown under broiler.
