Shepherd’s Pie

Ingredients

1 pound ground beef
2 tablespoons fat
1 cup chopped onion
1/2 cup diced green pepper
1 (10 3/4-ounce) can cream of mushroom soup
2 cups cooked or canned peas and carrots
2 cups seasoned hot mashed potatoes
melted butter
parsley (optional)

Directions:

Brown beef in hot fat; add onion and green pepper; cook until tender, but not brown. Stir in soup; place in greased 1 1/2-quart casserole; sprinkle peas and carrots over soup. Arrange mashed potatoes in ring on top; drizzle melted butter over top. Bake uncovered in a 350° oven for 25 minutes or until heated through.

Note: String beans may be substituted for peas and carrots.
