Place chicken in a greased large roasting pan; sprinkle with salt and pepper. Place onion, garlic and rosemary inside chicken; brush butter over chicken. Bake, uncovered, at 400 degrees for 1-1/2 hours, basting occasionally with pan juices, until golden and juices run clear when pierced.
Tip: Is there anything more tempting than a golden-brown roast chicken? We don't think so! For the juiciest chicken, leave the skin on during roasting, even if you plan to discard it afterwards…it will hold in all the the savory juices.
