Prepare pizza dough; set aside. Brush oil over a 15"x10" jellyroll pan; sprinkle with cornmeal. Roll out dough; place on pan. Combine tomato sauce, sugar and seasonings; spread over dough. Top with Parmesan cheese, onion, tomatoes and shredded cheeses. Bake at 400 degrees for 25 to 30 minutes, until edges are golden.
Pizza Dough:
Mix together 2 cups flour, yeast and salt; set aside. Stir oil into hot water, between 120 and 130 degrees. Add to flour mixture; mix well. Stir in enough of remaining flour to make a soft dough. Knead on a lightly floured surface until smooth and elastic, about 6 minutes. Cover and let stand for 10 minutes before rolling out.
Tip: Pizza dough is much easier to handle if it's made ahead of time and refrigerated overnight.
