Choose your favorite oil flavoring for this recipe-cinnamon, peppermint, or fruit are just a few of the flavors available.
2 cups sugar
2/3 cup water
2/3 cup corn syrup
1/2 teaspoon oil flavoring
3 drops food colors
Grease lollipop molds with spray vegetable shortening, and arrange them on a cookie sheet that has also been sprayed. Cook sugar, water, and corn syrup in heavy saucepan over high heat, stirring till sugar dissolves. Reduce heat and continue cooking to hard-crack stage. Remove from heat and stir in flavoring and coloring. Spoon syrup into lollipop molds with wooden sticks inserted. When lollipops cool, wrap in plastic wrap. Makes approximately 25 lollipops.
Variation: Place wooden sticks on greased cookie sheet and pour about 1 tablespoon syrup on end of each stick to make round lollipops. While candy is still hot and sticky, decorate with gumdrops cut in pieces, cinnamon candies, commercial cake decorations, or frosting.
