2 cups sugar
1 cup corn syrup
1 cup water
1 cup peanuts
1 cup coconut flakes
1/4 cup butter
1 teaspoon vanilla extract
1 1/2 teaspoons baking soda
Mix sugar, corn syrup, and water together in heavy saucepan, stirring till dissolved. Bring to boil. Cook to 275 degrees F. (284 degrees F. at sea level) on candy thermometer. Add peanuts and coconut and continue cooking to 300 degrees F. (309 degrees F. at sea level). Remove from heat and add butter and vanilla. Add baking soda and stir quickly (candy will foam up). Quickly pour out onto a large buttered baking sheet. Stretch and pull candy out with fingers (wear rubber gloves to avoid burns) till thin. When cool, break into pieces.
