1 cup buttermilk
1 cup rolled oats
1 egg unbeaten
1/2 cup brown sugar, packed
1 cup flour, stirred and measured
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 cup vegetable oil
2 tablespoons raisins (optional)
Pour buttermilk over oats (sour milk may be substituted for buttermilk: place 1 tablespoon vinegar in 1-cup measure; add milk to measure one cup; allow to stand 2 to 3 minutes). Let stand 5 minutes. Add egg and brown sugar to oats; mix well. Add sifted dry ingredients and oil; mix thoroughly. Spoon into 12 greased muffin tins or cupcake liners. Raisins (or chopped dates) may be added, if desired. Bake at 400 degrees F. for 18 minutes or until done. Makes 12 large muffins.
