1 cup flour, sifted
1 cup whole wheat flour, sifted
1/2 teaspoon salt
4 teaspoons baking powder
1/2 cup brown sugar, packed
1 cup milk
2 eggs slightly beaten
1/3 cup vegetable oil
Grease 12 large (2 1/2 inch) muffin cups or use cupcake liners. In large mixing bowl blend all-purpose flour and whole wheat flour, salt, baking powder, and brown sugar. Combine milk, eggs, and oil; stir just until dry ingredients are moistened. Spoon batter into prepared pans. Bake at 425 degrees F. for 15 minutes or until done. Makes 12 muffins.
Note: 1/2 cup coarsely chopped raisins, dates, or nuts or a combination of these may be added, if desired.
