In the bottom of the pie crust, layer the cheeses, then the shrimp, the crabmeat and then the mushrooms.
Combine the egg substitute, milk, flour, salt, pepper, cayenne and nutmeg. Stir in the sherry and oil and mix well. Pour over the crab, shrimp and mushrooms. Bake at 375 degrees for 40 minutes or until browned. Cool for 20 minutes before serving.
