Place the fish filets in a baking dish sprayed with non-stick olive oil spray. Mix the salt, mace, pepper and olive oil and spread over the fish. Bake for 30 minutes at 350 degrees.
Blend the flour with the milk in a saucepan with a wire whisk, stirring over medium heat until thickened. Add part of the hot mixture to the liquid egg substitute and blend. Combine with the rest of the mixture. Heat until steaming and add the sherry. Cook for 5 minutes and pour over the fish.
