Salmon in Mushroom Sauce

Ingredients

4 6 ounce salmon filets
1/2 pound mixed wild mushrooms, coarsely chopped
1 cup dry white wine
1 1/2 cups non fat milk
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground white pepper

Directions:

Poach the salmon and mushrooms at medium high heat in a deep skillet in the wine for 5 minutes. Remove the salmon from the pan, add the milk, salt and pepper and increase the heat and reduce the stock until it thickens. Serve the sauce over the salmon.
