Tuna Sauce for Pasta

Ingredients

3 ounces extra virgin olive oil
1 large sweet onion, finely chopped
1 can anchovy fillet, rinsed and finely chopped
3 cloves garlic, minced
6 tablespoons fresh flat leaf parsley, coarsely chopped
1 can Italian tuna in olive oil, drained and broken into flakes
2 tablespoons capers
1 cup canned crushed tomato
1/4 teaspoon freshly ground black pepper

Directions:

In a sauté pan, warm the olive oil over medium heat and sauté the onion until translucent. Add the anchovies, garlic and parsley and cook for 1 minute. Add the tuna, capers, tomatoes and pepper and continue to cook until the sauce is warm.
