Flounder Romano

Ingredients

1 pound flounder filet
2 tablespoons polyunsaturated oil
1 onion, chopped
2 tablespoons flat leaf parsley, chopped
1 (8-ounce) can diced tomato with juice
1/2 teaspoon kosher salt
1/2 teaspoon basil
1/4 teaspoon freshly ground black pepper
1/2 cup grated Romano cheese

Directions:

Heat the oil in a skillet. Add the onion and parsley and sauté over medium heat until the onion is translucent. Add the tomatoes and seasonings and cook for 10 minutes. Add the fish, cover and simmer for 10 minutes until the fish flakes easily. Sprinkle with the cheese before serving.
